 The Gesha variety 

It is a superior quality variety, known worldwide for its delicate floral aromas of jasmine and peach. It originates from the forests of Ethiopia and gained fame in 2005 by winning multiple competitions in Panama. It was named after a region in Ethiopia near a mountain called Gesha. This variety is highly valued by specialty coffee producers because, despite being less productive, they receive better prices for their coffee due to its quality. The variety is characterized by its tall stature, large cherries and leaves, and is typically grown at high altitudes where it adapts best.

The Producer

Yesit Bonilla and his wife Yoviris had different professions, but five years ago, Yoviris's father, a traditional coffee farmer, passed away and left them the farm "La Esmeralda." Since then, Yesit and Yoviris decided to fully commit to producing specialty coffee. Together, we have experimented extensively with implementing new fermentation and drying protocols. Recently, we conducted lactic and alcoholic fermentations, which significantly improved their coffee's cupping score. We also visited them recently with the Magicians team, staying several nights, and learned a lot about specialty coffee production and agricultural practices.s.

The Process

Everything starts with a really good manual harvest; ripe cherries guarantee a sweeter and cleaner flavor. Then we proceed with a three-day fermentation process with the whole cherry. We have observed that this initial fermentation helps us develop sweetness while reducing bitterness and astringency. We then remove the skin of the cherries for another round of fermentation (72 hours). Finally, the coffee is washed and moved to solar drying beds, where it dries slowly in the shade over a period of 20 to 30 days.
