In Colombia, most farmers have one BIG obstacle when drying coffee – rain.

Typically, farmers will use methods like dry beds (long, outdoor beds that will expose the cherries, or beans from all sides) but this exposes the cherries to the elements. Some will use tents (like the one pictured above) but they still have issues with high levels of humidity that keep the cherries from fully drying.

Another way some of our farmers dry their coffees is mechanical drying. This requires farmers to invest a LOT of money into equipment that also requires a continuous fire, which needs material to burn as well.

This is where innovation is imperative to coffee production...

With the funds we are raising, Manolo is working along side Diego, one of our farmers, to build a room where coffee wouldn't be exposed to the elements, and is humidity and temperature controlled. This will allow them to truly control and experiment with different coffees, removing the difficulties of navigating the weather.
