For this amazing project our friend Diego recounts the story of its ideation and first steps. Here we provide the English translation as well as a photo of the original note in Spanish.
"1,650 meters above sea level. It is the beginning of the harvest season. Rainy days: seven pickers harvest coffee from Monday to Saturday until midday. We ferment the coffee beans, idealizing an incredible flavor. Java variety: the beans huge, full of flavor and magic.
Martín is a little worried. It rains a lot — how can we dry the coffee without damaging its quality? Each bean is fermented in a controlled way. Today a challenge arises: drying the beans while protecting their quality.
It is a dark room, a daily routine for Martín. What could happen after this craziness? No heat, no sun, we won't be able to dry the coffee. A constant airflow appears, and then the magic happens! The incredible solution: installing an industrial dehumidifier that slowly removes the moisture from the coffee beans.
