The Typica variety
Typica is one of the most iconic coffee varieties in history. It was among the first to be domesticated, and during the colonial era, the Spanish, French, and Dutch helped spread it across the world. In Colombia, Typica was widely grown until the 1980s, when many farmers began replacing it with more productive and disease-resistant varieties.
Today, Typica is rare and hard to find. Only a few producers, like Yoher, still preserve it for its quality and flavor—a profile that is smooth, elegant, and complex, with distinctive sweet and fruity notes.
The Producer
The average age of a coffee farmer in Colombia is 57, a statistic that highlights a deeper issue in the industry: younger generations are increasingly turning away from coffee farming. The reasons are many—low profits, labor shortages, and volatile prices, among others.
This was also true for Yoher. He left his hometown in search of new opportunities in the city, but soon realized that office life wasn’t for him. He returned to the mountains and decided to continue his family’s coffee tradition, this time with a focus on producing high-quality coffees that would allow him to build a future for himself and his family. Yoher is now a 29-year-old producer committed to the future of coffee.
The Process
Everything starts with a really good manual harvest; ripe cherries guarantee a sweeter and cleaner flavor. Then we proceed with a three-day fermentation process with the whole cherry. We have observed that this initial fermentation helps us develop sweetness while reducing bitterness and astringency. We then remove the skin of the cherries for another round of fermentation (48 hours). Finally, the coffee is washed and moved to solar drying beds, where it dries slowly in the shade over a period of 25 to 35 days.
This bean is definitely harder than others, I use a hand grinder so I have to put a bit more muscle in the grinding process but the flavor of this bean is so awesome that I can’t even complain about the grinding process. Still totally doable and well worth the pay off of an amazing cup of coffee!
