Bourbon Ají is one of the latest coffee discoveries in Colombia. It gained major recognition after becoming a finalist in the 2021 Cup of Excellence.
The name "Ají" comes from the Spanish word for "chili pepper" because the coffee cherries from these trees have an aroma reminiscent of hot chili peppers.🌶️☕
Flavor-wise, this variety is truly exceptional—intense spicy and floral notes, a honeyed body, and hints of blackberry, strawberry, and jasmine.
Although often called "Bourbon Ají," genetic testing confirms it's actually an Ethiopian landrace, not a Bourbon variety.
Its exact journey to Colombia remains uncertain, but the most accepted theory is that a farmer took seeds from the Ethiopian variety collection of the Colombian National Coffee Federation—something that has happened before.
