the Wush Wush variety
The Wush Wush variety is a rare and exotic coffee known for its small and dense beans. This variety stands out for its complex and vibrant cup profile, often featuring notes of sweet fruits, florals, chocolate, and spices. Other notes can include blueberry, vanilla, maple, lavender, watermelon candy, and even chocolate-malt undertones, depending on the processing and terroir.
Wush Wush is prized in the specialty coffee world for its unique sensory experience and its adaptability to different climates, which has enabled successful cultivation in places like Colombia. The variety is also recognized for its resilience to environmental stresses and its potential for producing high-quality, limited-yield harvests. Its distinctive profile and rarity make it highly sought after among coffee enthusiasts and roasters alike.
The Producer
Angelica Rojas is a dedicated producer focused on high-quality coffee. Her farm is located at nearly 2,000 meters above sea level in the region of Planadas, Tolima — one of Colombia’s most important coffee-growing areas, blessed with a unique microclimate and rich volcanic soils.
the process
Everything starts with a really good manual harvest; ripe cherries guarantee a sweeter and cleaner flavor. Then we proceed with a three-day fermentation process with the whole cherry. We have observed that this initial fermentation helps us develop sweetness while reducing bitterness and astringency. We then remove the skin of the cherries for another round of fermentation (72 hours). This year, we extended the fermentation slightly to enhance the sweet notes of vanilla and caramel that characterize this coffee. Finally, the coffee is washed and moved to solar drying beds, where it dries slowly in the shade over a period of 25 to 35 days.
